For this cute fish, we cut 1/2 inch strips of craft foam 10 inches long. It was long enough that students may label each end to correspond with the pictures. (These eventually get cut off.)
At first we tested the instructions from Snapguide with 1" ribbon. Three different people took almost 30 minutes to get something close to the picture, so I went hunting for simpler instructions. Many Youtube videos are in foreign languages, so I settled for the flat step-by-step guide at Origami Resource Center. Students unwilling to read and follow the pictures still had difficulty, but this is a great stick-to-it project!
