When in doubt, construction toys like these K'nex are great. One student spent three classes building a remote control car from the roller coaster kit. (He hates pictures of himself, but he agreed to let me capture his car in a few different stages of devleopment.)
The fish is a free form crafted from pictures in one instruction manual.
